Meet Kathryn Baxter — A Fearless Champion with an Unstoppable Spirit
Kathryn Baxter is a powerful example of resilience, determination, and heart. From a young age, she has faced life with courage—born with Neurofibromatosis Type 1 (NF1), a medical condition involving multiple lesions in her body and brain. Despite overcoming significant medical and learning challenges, Kathryn has never allowed obstacles to define her limits. Instead, she has turned them into fuel for greatness.
Kathryn graduated from J.C. Bermudez Doral Senior High School, earning a certification as a Veterinary Technician Assistant, and is currently continuing her education at Miami Dade College, where she is pursuing her goal of becoming a Veterinary Technician. Her passion for animal care extends beyond the classroom—she proudly volunteers at Miami-Dade Animal Services, working hands-on in the veterinary clinic to help animals in need.
An elite athlete on the world stage, Kathryn is a Gold Medal World Champion in Taekwondo Para Poomsae (P21 Intellectual Disability Division), earning her title in Veracruz, Mexico. She also captured a Bronze Medal at the Virtus Global Games in France, along with multiple gold medals across Florida and competitions throughout the United States. Her dedication to martial arts is extraordinary—she holds a 4th Degree Black Belt in Taekwondo with Para endorsement and is a Blue Belt in Jiu-Jitsu.
Kathryn has trained at United Martial Arts since the age of 6, growing not only into a world-class competitor but also a leader and role model. She now serves as a Junior Assistant Instructor, helping inspire and guide the next generation of martial artists with patience, empathy, and confidence.
Driven by passion and purpose, Kathryn’s ultimate dream is clear: to compete in the Paralympic Games for Taekwondo. With her proven track record, unbreakable determination, and fearless mindset, she is well on her way.
